National Pancake Day!

Let's be honest. Kids can disagree with their parents on just about everything. But there are two things, at least in our house, that everyone can agree on.

Pancakes and Rainbow Sprinkles. Pancakes are a weekend tradition in our house. My girls get so excited every Saturday and Sunday morning to go downstairs and help Daddy make the pancakes. They are not super adventurous when it comes to food. After all, they are only 1 and 3. But pancakes that taste like cake, glittered with rainbow sprinkles? Now that's a language they can understand!




To make things a little bit more fun, we served our pancakes up on pop sticks. Kids love eating anything that looks like a lollipop. And as a mom, I'm always up for doing fewer dishes in the end.

Here is our recipe for these delicious Cake Batter Pancake Pops!



Cake Batter Pancake Pops

Ingredients:

1 1/4 cup flour
3/4 cup yellow cake mix
1 tablespoon sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
1 1/4 cup milk
1/3 cup rainbow sprinkles

Directions:

Preheat a large skillet on medium high heat. Lightly grease pan with vegetable oil.

In a large bowl, combine dry ingredients (flour, cake mix, sugar, baking powder and salt), except for the rainbow sprinkles. In a separate large bowl, beat eggs. Combine slightly beaten eggs with vanilla extract and milk.

Slowly stir the dry ingredients into wet ingredients. Mix until batter is free of lumps. Stir in rainbow sprinkles.

Using a pancake pen or large cookie scoop, drop batter into preheated pan. Let cook for 3 minutes or until golden brown. Flip pancakes and cook for an additional 1 minute on the other side.

Remove from skillet and serve immediately.

**Helpful Tip: Pancakes are ready to be flipped once you see the batter has formed bubbles on the uncooked side.
